Dolores Chili Burgers for Memorial Day?

The month of May has been a busy one. Once Cinco de Mayo and Mother’s Day were in the past, it was quickly time to get ready for Memorial Day weekend entertaining. With all that going on, most people often overlook that May is also National Hamburger Month.

So before you start your weekend shopping, we want to make sure you have some inspiration whether you’re entertaining or attending a weekend barbecue. After all, what’s better than a Dolores Chili Cheeseburger?

In light of National Hamburger Month and the upcoming holiday weekend, here is a great burger recipe to get the juices flowing (and your mouth watering).

1 ½ pounds ground beef

1 20-oz. Dolores Chili Brick

Salt & Pepper to taste

Directions

Preheat grill and lightly oil the grate. In a medium bowl, mix together ground beef and completely thawed Dolores Chili Brick. Form patties from meat. Grill patties to liking and serve on buns with cheese and favorite toppings.

All American Burger Dog with Dolores Chili

Original recipe makes 2 burger dogs

1 pound ground beef (80% lean)


salt and freshly ground black pepper to taste

1 Dolores chili brick

2 slices Cheddar cheese

2 extra-long hot dog buns


4 teaspoons mayonnaise


2 tablespoons ketchup



Directions

1. Place half the ground beef on a sheet of plastic wrap. Pat it into a rectangular shape, about 1/2 inch thick, 8 1/2 inches long, and 4 inches wide. Season with salt and pepper. Roll the beef into a log, using the plastic wrap as a guide. Season with more salt and pepper. Wrap the plastic tightly around the log and twist both ends tight. Pat gently to slightly flatten. Repeat with remaining ground beef.

2. Preheat an outdoor grill for medium-high heat and lightly oil the grate. Remove the burger dogs from the plastic wrap and place on the grill, perpendicular to the grates. Cook until burgers are browned but still pink inside, 4 to 5 minutes, flip, and cook another 2 to 3 minutes. Place a slice of cheese on each burger dog and grill to medium doneness (an instant-read thermometer inserted into the center should read at least 140 degrees F/60 degrees C). Remove and rest 3 to 4 minutes.

3. Prepare Chili Brick

4. Toast hot dog buns on the grill and spread each with 2 teaspoons mayonnaise. Place burger dog on each bun and put two spoonfulls of chili on top. Top it off with 1 tablespoon of ketchup on top.

6 medium red peppers

1 can Dolores chili

1 cup cooked rice

1 cup monterey jack cheese, shredded

1 (15 ounce) cans diced tomatoes with green chilies

low-fat sour cream, for serving

Directions

1. Remove the tops, membranes and seeds from the red peppers.

2. Stir together rice, chili, and 1/2 of the cheese.

3. Spoon into the peppers.

4. Pour the diced tomatoes and juice into a 5-6 quart crock pot.

5. Placed stuffed peppers filled side up into crock pot.

6. Cover and cook on low for 5 hours or high for 3 hours.

7. Scoop out peppers to a serving plate, spoon tomato sauce from the bottom

of the crock pot over the peppers, and top with remaining grated cheese.

8. Serve with sour cream.
